Ingredients
1tablespoonChinese style curry paste
1/2teaspooncaster sugar
1/2teaspoonlight soy sauce
1/2teaspoondark soy sauce
1/2teaspoonoyster sauce
25gramscreamed coconut
200mlwater
1teaspoonchopped garlic in oil
25gramsJimmy's sate sauce
25gramssmooth or crunchy peanut butter
2teaspoonsrice wine
Instructions
Put 1 tablespoon Chinese style curry paste, 1/2 teaspoon caster sugar, 1/2 teaspoon light soy sauce, 1/2 teaspoon dark soy sauce, 1/2 teaspoon oyster sauce, 25 grams creamed coconut and 200 ml water in a saucepan. Bring to the boil over a medium heat, then reduce the heat to low and simmer for 1 minute.
Add 1 teaspoon chopped garlic in oil, 25 grams Jimmy's sate sauce and 25 grams smooth or crunchy peanut butter. Mix well until combined and simmer for 1 minute. Add 2 teaspoons rice wine to finish and your satay sauce is ready to serve.
Pour your satay sauce over chicken skewers, or into a serving bowl
