Banana Bread - Coffee Shop Style

Rich, sticky and sweet, coffee shop style banana bread is a delicious treat. Plus, it's easy to make, as well as being a great way to use up ripe bananas! This 'put everything in a bowl and mix it' recipe is effortless, but with delicious results.

Ingredients

  • 3 ripe bananas, mashed
  • 75 grams salted butter, melted
  • 125 grams soft light brown sugar
  • 1 egg, whisked briefly
  • 1 teaspoon vanilla extract
  • 175 grams very strong bread flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon bicarbonate of soda
  • 1/4 teaspoon sea salt
  • 1 teaspoon cinnamon
  • 3 tablespoons milk

Glaze (optional)

  • 1 tablespoon golden syrup

Instructions

  • Preheat the oven to 160C (fan). In a large bowl, add 3 ripe bananas, mashed, 75 grams salted butter, melted, 125 grams soft light brown sugar, 1 egg, whisked briefly, 1 teaspoon vanilla extract, 175 grams very strong bread flour, 1 teaspoon baking powder, 1/4 teaspoon bicarbonate of soda, 1/4 teaspoon sea salt, 1 teaspoon cinnamon, and 3 tablespoons milk. Whisk until the mix just comes together and pour into a lined loaf tin or baking tin.
  • Bake in the middle of the oven for around 1 hour. Check the banana bread with a skewer after around 50 minutes. Remove the baked banana bread from the oven and put the tin on a wire rack for 15 minutes. Remove the banana bread from the tin and set on the wire rack to cool completely (the paper can be removed once the banana bread is cool). Slice and serve.
