This banana bread recipe uses very strong bread flour that’s very high in protein (the same flour I use to make pizza dough). This makes it very much a banana bread loaf as opposed to a cake, whilst still being deliciously sweet from ripe bananas, vanilla and light brown sugar. The loaf is made rich with butter and egg and the topping made even more sticky sweet with golden syrup, if you so desire. The resulting texture is soft, sticky and pleasingly dense.

- Salted Butter
- Soft Light Brown Sugar
- Egg
- Vanilla Extract
- Very Strong Bread Flour
- Baking Powder
- Bicarbonate of Soda
- Sea Salt
- Ground Cinnamon
- Milk
How To Make Coffee Shop Style Banana Bread
This banana bread is so easy to make, with the ingredients simply combined in a large bowl and whisked until combined. The mix is poured into a lined loaf tin and it goes into a hot oven for around 1 hour.
Follow the whole recipe below – it takes just a few minutes to put together. The rest happens in the oven while you relax and the house fills with the sweet scent of cinnamon and banana.
Step 1: Mix Banana Bread Ingredients

Preheat the oven to 160C. In a very large mixing bowl, combine all of the ingredients and mix well.
Step 2: Bake

Pour the mix into a lined loaf tin and bake in the middle of the oven for around 1 hour. Check the loaf after around 50 minutes (see notes).
Step 3: Cool

Remove the baked banana bread from the oven and leave to cool in the tin for 10 minutes. Remove from the tin (with the lining still on) and set the banana bread on a wire rack to cool completely. Once cool, remove the baking paper, slice and serve.

Use Ripe Bananas
This recipe calls for ripe bananas, and the riper the better. When the skin gets darker, the bananas have a sweeter flavour and more intense flavour.
Banana Bread Mix Ins
This is a deliciously tasty banana bread recipe as it is, but you could certainly add some additional mix ins before baking. Think porridge oats, walnuts, pecans or chia seeds for a health kick, or chocolate chips for an indulgent treat!
Avoid Over Mixing
When the mix is coming together, whisk until just combined – a few lumps is fine. Over mixing can make the finished cake dense.
Check For Doneness
When the banana bread is close to being ready, you can check the middle with a wooden skewer. If the skewer comes out mostly clean, the loaf is ready. If the skewer is sticky with batter, return the banana bread to the oven for another few minutes and check again.
Glossy Finish
If you’d like a professional glossy finish on your banana bread, you can warm some golden syrup and brush over the top of the warm loaf when it’s fresh from the oven. This adds a sticky, shiny layer that’s very visually satisfying.

- 75 grams salted butter, melted
- 125 grams soft light brown sugar
- 1 egg, whisked briefly
- 1 teaspoon vanilla extract
- 175 grams very strong bread flour
- 1 teaspoon baking powder
- 1/4 teaspoon bicarbonate of soda
- 1/4 teaspoon sea salt
- 1 teaspoon cinnamon
- 3 tablespoons milk
Glaze (optional)
- 1 tablespoon golden syrup
Instructions
- Preheat the oven to 160C (fan). In a large bowl, add 3 ripe bananas, mashed, 75 grams salted butter, melted, 125 grams soft light brown sugar, 1 egg, whisked briefly, 1 teaspoon vanilla extract, 175 grams very strong bread flour, 1 teaspoon baking powder, 1/4 teaspoon bicarbonate of soda, 1/4 teaspoon sea salt, 1 teaspoon cinnamon, and 3 tablespoons milk. Whisk until the mix just comes together and pour into a lined loaf tin or baking tin.
- Bake in the middle of the oven for around 1 hour. Check the banana bread with a skewer after around 50 minutes. Remove the baked banana bread from the oven and put the tin on a wire rack for 15 minutes. Remove the banana bread from the tin and set on the wire rack to cool completely (the paper can be removed once the banana bread is cool). Slice and serve.
