Deep Fried Roast Potatoes

  • 1 Deep Fryer

Ingredients

  • 2-3 potatoes
  • 2 tablespoons plain flour
  • 2 tablespoons semolina
  • oil for deep frying

Instructions

  • Peel and rinse 2-3 potatoes, cut into large pieces and add to a pot with enough water to cover. Season generously with salt, bring to the boil and simmer potatoes for 10-12 minutes or until just tender. Drain water and return potatoes to pot.
  • Mix 2 tablespoons plain flour and 2 tablespoons semolina briefly, pour onto parboiled potatoes and shake to coat well.
  • Heat oil for deep frying to 180c. Carefully drop floured potato chunks into hot oil and fry for 4-5 minutes until crispy and golden. Remove from oil with a slotted spoon. Season potatoes to taste with sea salt and serve.
