Why choose a deep fried crispy roast potatoes recipe for your next roast dinner? These golden, crispy delights are the perfect combination of crunch and fluffy potato. Technically, they’re not roast potatoes, but you won’t care when they taste this good!


The humble potato gives us so much and asks so little. Chips, baked potatoes, mash, fritters. Each one more delicious than the last. Sunday roasts and Christmas dinners call for the very best potatoes, and this recipe (I hope) provides just that! Again, let’s quickly gloss over the fact that these are deep fried potatoes and not technically roast potatoes at all, and get started!

Ingredients For Deep Fried Roast Potatoes

  • Potatoes: Floury / starchy potatoes work well for roasting so look for Maris Piper or King Edward potatoes.
  • Other Ingredients: Plain Flour, Semolina, Oil For Deep Frying

How To Make Deep Fried Roast Potatoes

These potatoes need a bit more care and attention compared to putting them in the oven, but the results are spectacularly good. First, the potatoes are parboiled until just tender, before being drained and shaken up to make rough edges (more crispy bits!). Next, the potatoes are coated in a combination of flour and semolina, before being deep fried to golden, crispy perfection!

Step 1: Boil Potatoes

Peel and rinse 2-3 potatoes, cut into large pieces and add to a pot with enough water to cover. Season generously with salt, bring to the boil and simmer potatoes for 10-12 minutes or until just tender. Drain water and return potatoes to pot.

Step 2: Flour

Mix 2 tablespoons plain flour and 2 tablespoons semolina briefly, pour onto parboiled potatoes and shake to coat well.

Step 3: Deep Fry Potatoes

Heat oil for deep frying to 180c. Carefully drop floured potato chunks into hot oil and fry for 4-5 minutes until crispy and golden. Remove from oil with a slotted spoon. Season potatoes to taste with sea salt and serve.

Make ahead: Parboil potatoes ahead of time and store in the fridge for 1-2 days ready to deep fry when you choose.
Reheat: Fry crispy deep fried roast potatoes in hot oil again for 1-2 minutes until piping hot. Alternatively, air-fry at 200C for 8-10 minutes.
