Minced Pork Salad (Thai Takeaway Style)

Ingredients

  • 1 teaspoon thin soy sauce
  • 1 teaspoon fish sauce
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon sugar
  • 2 shallots thinly sliced
  • 1 spring onion thinly sliced
  • small handful fresh coriander leaves finely chopped
  • small handful fresh mint leaves finely chopped
  • 1 generous tablespoon toasted rice
  • 1 teaspoon roasted chilli flakes
  • 125 grams minced pork
  • 3 tablespoons water

Instructions

  • In a small bowl, add 1 teaspoon thin soy sauce, 1 teaspoon fish sauce, 1 tablespoon fresh lime juice and 1/2 teaspoon sugar. Mix well and set aside.
  • In a separate small bowl, add 2 shallots, 1 spring onion, small handful fresh coriander leaves, small handful fresh mint leaves, 1 generous tablespoon toasted rice and 1 teaspoon roasted chilli flakes.
  • Heat a wok or large frying pan over medium-high heat. Add 125 grams minced pork and 3 tablespoons water and stir-fry for 3-4 minutes until water is absorbed and pork is cooked. Switch off heat and allow cooked pork to stand for 1 minute.
  • Add prepared sauce, vegetables and herbs to cooked pork, mix well and transfer to a serving plate. Garnish with more toasted rice and serve with sticky rice and lettuce leaves.
