This Thai style minced pork salad is a variation on Thaikhun’s minced chicken salad dish. Based on a classic laab, it’s fiery hot and packed with flavour, with garlic, shallots, chillies, fresh herbs and more. A topping of crispy toasted rice adds texture and the spicy salad is served with sticky rice or fresh lettuce leaves.

Ingredients For Minced Pork Salad

This salad is full of flavour and fresh ingredients. Deliciously savoury minced pork is cut through with a dressing of soy sauce, fish sauce, fresh lime juice and sugar. The salad ingredients include shallots, spring onion, coriander and mint for fresh flavour, as well as toasted rice for texture and roasted chilli flakes for a smokey flavour and a touch of heat.

How To Make Minced Pork Salad

Making this simple Thai style minced pork salad is so easy. First, the soy sauce, fish sauce, lime juice and sugar are combined. Then, the remaining salad ingredients are combined separately. Pork mince is cooked with a touch of water and combined with the prepared seasonings and fresh ingredients and served with sticky rice or lettuce leaves.

Step 1: Make Salad Dressing

In a small bowl, add 1 teaspoon thin soy sauce, 1 teaspoon fish sauce, 1 tablespoon fresh lime juice and 1/2 teaspoon sugar. Mix well and set aside.

Step 2: Combine Salad Ingredients

In a separate small bowl, add 2 sliced shallots, 1 sliced spring onion, 1 small handful fresh coriander, 1 small handful fresh mint, 1 generous tablespoon toasted rice and 1 teaspoon roasted chilli flakes.

Step 3: Cook Minced Pork

Heat a wok or large frying pan over medium-high heat. Add 125 grams minced pork and 3 tablespoons water and stir-fry for 3-4 minutes until water is absorbed and pork is cooked. Switch off heat and allow cooked pork to stand for 1 minute.

Step 4: Assemble Thai Style Minced Pork Salad

Add prepared sauce, vegetables and herbs to cooked pork, mix well and transfer to a serving plate. Garnish with more toasted rice and serve with sticky rice and lettuce leaves.
