As the name implies, this simple Chinese takeaway style soup is made up of chicken and mushrooms – in this case, sliced button mushrooms. The sliced mushrooms simmer in the stock for a few minutes with added sea salt, MSG and light and dark soy sauce. The result is an umami overload, and a soup full of savoury goodness.

How To Make Chinese Takeaway Style Chicken Mushroom Soup
This Chinese takeaway style chicken mushroom soup comes together in just a few minutes. First, light chicken stock is seasoned with light soy sauce, dark soy sauce, sea salt, MSG and white pepper. Next, chicken and sliced mushrooms are simmered in the flavourful stock. The soup is thickened slightly with potato starch, and finished with egg ribbons for a deliciously silky texture.
Step 1: Season Stock
In a pot, add 325 millilitres light chicken stock, Dash light soy sauce, 1/4 teaspoon dark soy sauce, 1/4 teaspoon sea salt, 1/4 teaspoon MSG and Pinch white pepper. Bring to the boil, reduce the heat to low and simmer for 1 minute.
Step 2: Simmer Chicken Mushroom Soup
Add 50 grams raw chicken breast fillet, sliced (or 1 small handful cooked sliced chicken breast or thigh meat) and 2-3 small button mushrooms, sliced. Simmer for another 2-3 minutes.
Step 3: Finish & Serve
Ladle Chinese takeaway style chicken mushroom soup into a serving bowl and serve.
Recipe Tips For Chicken Mushroom Soup
Chicken: Leftover cooked chicken breast or thigh meat works well in this chicken mushroom soup recipe. Simply slice the chicken thinly and reheat gently in the soup until piping hot. If using raw meat, just let the chicken simmer a little longer in the stock until you’re happy it’s cooked through. Providing it’s sliced thinly, it’ll cook in just a couple of minutes.
Light Chicken Stock: If your chicken stock is salty, adjust the added salt in the recipe accordingly. Home made light chicken stock works well in this recipe. I also like Kallo organic low salt chicken stock cubes. Using a lightly seasoned stock like this is useful as it leaves room for additional flavour in the form of light soy sauce, MSG etc!
