Nashville hot chicken

Deliciously crispy fried chicken, coated in a flavourful spiced oil with garlic, paprika and chilli.  If you like fried chicken and you like your food spicy, Nashville hot chicken is a dish for you!

It may seem a little boring to serve this fried chicken with plain bread, but when the chicken is as flavourful as this, some simple bread and sliced dill pickle slices are all you need.

Ingredients
  • 100 grams plain flour
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried Italian herbs
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 egg
  • 3 tablespoons milk
  • 1 teaspoon Frank's Red Hot Sauce
  • 1 skinless, boneless chicken breast fillet around 150g
  • Oil for deep frying
Cayenne Oil
  • 2 teaspoons cayenne pepper
  • Pinch smoked paprika
  • Pinch paprika
  • Pinch chilli powder
  • 1/4 teaspoon garlic powder
  • Pinch onion powder
  • 1 tablespoon soft dark brown sugar
Instructions
  1. First, prepare the spices for the cayenne oil. To a heatproof bowl, add the cayenne pepper, smoked paprika, paprika, chilli powder, garlic powder, onion powder and brown sugar. Mix well and set aside.

  2. For the chicken, place the plain flour, garlic powder, onion powder, Italian herbs, sea salt and black pepper on a plate. Mix well.

  3. Add the egg, milk and hot sauce to a large bowl. Mix well.

  4. Cut the chicken breast into 5-6 long strips. Keeping one hand dry and working one strip at a time, dip each chicken strip into the plain flour, then into the egg, then back into the seasoned flour again. You can go back into the egg and flour a second time if a thicker crunchy coating is desired. Repeat this process until all of the chicken strips are breaded and set them aside on a plate.

  5. Heat oil for deep frying to 180c / 350f. Carefully place each breaded chicken strip into the hot oil and fry for around 4 minutes, turning occasionally until the chicken is cooked through, crispy and golden. Remove from the oil with tongs, drain off any excess oil and set the cooked chicken aside on a clean plate.

  6. Allow the oil you used to fry the chicken to cool for 2-3 minutes while the chicken strips are resting. Carefully spoon 4-5 tablespoons of the hot oil into the prepared bowl of cayenne spices and mix well. Immediately brush the cayenne oil generously onto the crispy chicken strips.

  7. Serve your Nashville hot chicken with plain bread and dill pickle slices.
