How To Make Thai Style Pork Meatballs
To make Thai takeaway style pork meatballs, the ingredients are simply combined and meatballs shaped, before being fried briefly in a hot pan until nicely coloured and sizzling hot. The sticky rice in the mix helps the meatballs hold their shape, perfect for skewering with cocktail sticks and dipping into sweet chilli sauce.
Step 1: Meatball Mix
In a pestle and mortar, add 1 small shallot, finely chopped, 1 garlic clove, finely chopped, 1 Makrut lime leaf, thinly sliced and chopped and 1 teaspoon fresh coriander stems, finely chopped. Pound to a rough paste. Transfer the paste to a large bowl. Add 1 generous teaspoon red curry paste, 1 teaspoon fish sauce, Pinch turmeric, Pinch white pepper, Pinch black pepper, 125 grams pork mince and 25 grams cooked sticky rice. Mix well until combined. Cover and set aside for 20 minutes, or overnight in the fridge.
Step 2: Fry Meatballs
Heat a frying pan over medium-low heat. Form nine small pork meatballs from the prepared mix. Carefully drop the prepared meatballs into the hot pan and fry for 8-10 minutes, turning occasionally until the sausage meatballs are sizzling, nicely charred and cooked through.
Step 3: Serve
Transfer the meatballs to a serving plate and serve with sweet chilli sauce.
