Pancakes are great for breakfast and so easy to make. The mix itself comes together in just a couple of minutes, making it effortless to whip up fresh pancakes for a weekend breakfast treat!
Ingredients For Breakfast Pancakes
This foolproof pancake mix is made with just a few simple ingredients. Self raising flour for light, fluffy pancakes, and just enough sugar to ensure you can eat these pancakes with both savoury and sweet toppings.
- Self Raising Flour
- Sea Salt
- Caster Sugar
- Eggs
- Milk
How To Make Pancakes & Syrup
To make these easy pancakes with syrup, self raising flour, sea salt and caster sugar are mixed in a bowl. Eggs and milk are added and the mix is whisked just enough to come together. A generous ladleful of pancake batter at a time is poured into a non stick pan or crepe pan, and the pancakes are cooked until bubbly on top and golden underneath. After being flipped, just a few more seconds is all that’s needed and your perfect pancakes are ready to be smothered in your favourite toppings!
Step 1: Pancake Mix
In a large bowl, combine the self raising flour, sea salt and caster sugar. Mix briefly. Add the egg and milk and whisk until combined, adding a touch more milk if necessary to form a medium-thick batter. Set aside for 5 minutes.
Step 2: Cook The Pancakes
Heat a crepe / pancake pan or non stick frying pan over a medium-low heat. Add 1 ladle of pancake batter to the pan and cook until bubbles begin to appear across the top of the pancake.
Use a spatula to flip the pancake and cook on the other side for another 30-40 seconds. Transfer to a board and cover with a clean tea towel. Repeat the process until all of the pancakes are cooked.
Step 3: Serve The Pancakes & Syrup
Serve the these soft and fluffy pancakes topped generously with syrup or your favourite savoury or sweet toppings, or set aside to cool completely.
Pancakes & Syrup Recipe Tips
Silver Dollar: Use smaller spoonfuls of batter to make mini pancakes, or ‘silver dollar’ as they’re known on American diner menus. Keep an eye on them as they may cook a little quicker than larger pancakes.
Mix-Ins: Add a large handful of fresh berries or chocolate chips directly to the pancake batter mix.
Savoury & Sweet Toppings: Butter, Crispy Bacon, Breakfast Sausage, Fresh Fruit, Maple Syrup, Chocolate Spread, Jam

Can I use plain flour to make pancakes?
Yes! If you’re using plain flour, you can add 2 teaspoons of baking powder and 1/4 teaspoon of bicarbonate of soda to the dry mix.
Can I prepare pancake batter ahead of time?
Absolutely! You can easily prepare this pancake batter mix the night before, ready to whip up a fresh batch of pancakes & syrup for breakfast the next day. Or, if you’d like to cook them ahead of time too, you can reheat them under a hot grill for a few minutes until warm.
Why are these pancakes so thick? I’m used to thinner pancakes!
These pancakes are like drop scones or scotch pancakes. The kind you’d find on the breakfast menu in American burger bars (before 11am).
