How to Make Salt & Chilli Chicken Wings
To make salt & chilli chicken wings, we need to start with Chinese takeaway style crispy chicken wings. It’s worth looking at this as a recipe in itself, as the crispy wings are delicious even without the salt and chilli finish. You can use cooked crispy chicken wings alongside your favourite Chinese takeaway style sauces. As if you needed any more reason to cook some, they also keep very well! This means you can fry them ahead of time and have a batch ready in your fridge or freezer to use any time you desire. Cooking the wings ahead of time makes life easy, and is exactly how your local Chinese takeaway chef will prep your favourite wings in advance of you placing your order!
With a batch of crispy chicken wings waiting patiently in your fridge or freezer, you’ll only ever be a few minutes away from a piping hot portion of salt and chilli chicken wings!
1: Heat The Chicken Wings
Heat oil for deep frying to 180C. Carefully drop the cooked chicken wings into the hot oil and fry for 2-3 minutes, or until piping hot and crispy. Remove from the oil with a slotted spoon and set aside on a plate. Alternatively, reheat the wings on a rack in the oven or in an air fryer at 180C for 10 minutes.
2: Salt & Chilli The Chicken Wings
Heat a wok or a large frying pan over a medium-high heat. Add the sliced onion, carrot, spring onion and chopped garlic in oil and stir-fry for 30 seconds. Add the piping hot crispy chicken wings and season generously with Chinese salt & pepper mix. Add the chilli flakes and rice wine and mix well once more.
3: Serve Salt & Chilli Chicken Wings
Transfer the salt & chilli chicken wings to a serving plate or food container and serve.
Recipe Tips For Salt & Chilli Chicken Wings
Fresh Garlic and Chilli: If you prefer, you can use 1-2 fresh garlic cloves finely chopped, and 1 fresh green chilli instead of chopped garlic in oil and dried crushed chilli flakes.
No Veg: For an even quicker route to salt & chilli wings, simply reheat the crispy wings as described in the recipe method, transfer to a large bowl and then season the wings generously with Chinese salt & pepper mix. It’s not as elaborate as finishing the wings with all of the traditional salt & chilli ingredients, but it’s still delicious!
