Seeded Wholemeal Bread (Bread Machine Method)

This seeded wholemeal loaf makes a good everyday bread, packed with vitamins and fibre.


I’ve made a lot of bread since I invested in a bread machine. As gadgets go, it’s one that has more than justified the price I paid for it. As well as making this seeded wholemeal bread from start to finish, I use the bread maker to make pizza dough and chapati dough too. There’s something to be said for making bread with simple ingredients – flour, yeast, salt and water, maybe some sugar. Freshly baked, with a crispy crust and a fluffy, chewy texture, good bread doesn’t need to be very complicated at all.

Ingredients For Seeded Wholemeal Bread

To make this seeded wholemeal loaf I use a mix of strong wholemeal bread flour and white bread flour. The result is a deliciously light loaf. But, you could use only wholemeal flour for this recipe, albeit making a loaf that’s slightly more dense. With the addition of a variety of seeds, this is a nourishing everyday bread, made easy in a bread machine.

  • Very Strong Bread Flour: I like Allinson very strong bread flour.
  • Seeds: Sesame Seeds, Linseeds, Poppy Seeds.
  • Other Ingredients: Sea Salt, Sugar, Salted Butter, Fast-Acting Dry Yeast, Water.

How To Make Seeded Wholemeal Bread

Of course, the beauty of using a breadmaker for this recipe is that all we are required to do is add the ingredients. The breadmaker will knead the dough, shape the dough and produce a delicious freshly baked loaf of bread.

If you don’t have a breadmaker, you can use the same recipe, kneading the dough by hand for 10 minutes. Set aside to prove for around 2 hours, knock back and shape into a loaf. Set aside on a baking tray to prove again for another 45 minutes and bake at 180C for 30-40 minutes.

Step 1: Ingredients

To a breadmaker tin, add the wholemeal bread flour, sea salt, sugar, butter, yeast, sesame seeds, poppy seeds, linseeds and water. Put the tin into the breadmaker.

Step 2: Bake

Bake on ‘wholemeal’ ‘medium’ setting. The loaf should take around 4-5 hours to bake. Once the breadmaker indicates the wholemeal seeded loaf is baked, remove it from the tin. Set aside on a wire rack to cool completely.

Step 3: Serve

Slice and serve.

  • 325 grams strong wholemeal bread flour I like Allinson's / Carr's brand
  • 75 grams strong white bread flour
  • 1 teaspoon sea salt
  • 1 teaspoon caster sugar
  • 20 grams salted butter
  • 1 teaspoon fast-action dried yeast
  • 1 tablespoon sesame seeds
  • 1 tablespoon poppy seeds
  • 1 tablespoon linseeds
  • 280 ml water
Instructions
  1. To a breadmaker tin, add the wholemeal bread flour, sea salt, sugar, butter, yeast, sesame seeds, poppy seeds, linseeds and water. Put the tin into the breadmaker.
