When I was researching recipes for The American Diner Secret, breakfast quickly became one of my favourite meals of the day. Crispy streaky bacon, fluffy pancakes, savoury breakfast sausage and more have become regular items on my rotation, but the one that always feels like a treat are these waffles. They’re crisp and light, with just enough sweetness to pair well with both savoury and sweet foods, which means there’s always another good reason to prepare a batch.
Ingredients For American Diner Style Waffles
These American style waffles are made with a mix of plain flour, sugar, baking powder, salt, milk, butter and egg. For this recipe, the egg white is whipped separately, ensuring the finished waffles are light and crisp with a satisfying texture.

How To Make American Diner Style Waffles
To make these delicious American diner style waffles, the dry and wet ingredients are combined. The egg is then separated and the egg white whipped separately – this adds a deliciously light and fluffy texture to the finished waffles. With the batter mix prepared and a waffle iron hot and lightly oiled, crispy fluffy waffles aren’t far away!
Step 1: Batter
In a large bowl, add 120 grams plain flour, 1 tablespoon caster sugar, 2 teaspoons baking powder and 1/4 teaspoon sea salt. Mix well. In a separate large bowl or jug, add 225 millilitres milk, 60 grams salted butter, melted and the yolk from 1 egg, yolk and white separated. Mix well. Combine the wet and dry ingredients and mix once more until just combined.
Step 2: Egg White
Whisk the egg white from 1 egg, yolk and white separated in a bowl until soft peaks form. Add the egg white to the batter mix and gently stir through until just combined.
Step 3: Waffles
Spoon the batter into a lightly greased and preheated waffle iron and cook according to the manufacturer’s instruction, usually around 5-7 minutes. Complete the process until all of the waffles are cooked.
Recipe Tips For American Diner Style Waffles
Make Ahead: If you have leftover batter, it’s worth making more waffles and storing them as opposed to storing the leftover batter. Cooked waffles store well in a food-safe bag or container for up to 2 days, or you can freeze them. To reheat, simply pop in the toaster or under the grill (you can reheat from frozen) for a few minutes until crispy and piping hot!
